Crockett put me on my first rooster of the season on Saturday and I thought it would be a good idea to follow his recipe that he has posted here. This was the end result, braised pheasant with a blackberry/sherry/cream reduction. It tasted just as good as it looks! Thanks x 2 Crock!

You're welcome Take'em, but you'd better thank Ruby instead - she did all the work - I just stood there looking stunned while all the birds flew around! lol! Looks delicious by the way - a way more "reduced reduction" than I usually make. I'm drooling al over the keyboard! -Croc
