To get back to the original thread I usally filet the breasts out on ducks and geese and if I want one for roasting I skin it to get rid of the fat. Too many things we eat are loaded with fat and you know what they say You are what you eat.

I have also noted that we are getting a lot more smaller short necked geese here. A method I have started using is what I call a rib roast. I pluck the breast and down the sides, then cut through the ribs, a guthook knife works well here, and continue all around the breast untill I can lift it off the frame leaving the breast bone attached to the meat.

Providing there are no pin feathers I prefer to pluck them out. Cooking with the skin on makes them taste much better. Can be time consuming especially if you have limited out. This we you have no waste, even though the majority of meat is only in the breasts. Nice to have a whole bird sitting on your plate at supper time with some wild rice!!!

I agree that it is nice to be able to roast a whole bird..especially a goose. Gut sometimes its just to much work to have to pluck them all.
Should have a good shoot Rockblind, from what we saw there were loads of Juvies this year.

HAHA boyz i use a homeade plucker and have been since i was big enough to hold a bird up to it !! So keep your sore thumbs and the hell with bresting them out... I have a hole roast goose is way better for sure!
